POHA KHEER




Aval Payasam (Poha Kheer) is made with milk and poha. Learn how to make/prepare Aval Payasam by following this easy recipe. It will be helpful to prepare a sweet in short time for your guest and kids.


INGREDIENTS:
Poha (Flattered Rice) – ½ cup
METHOD:



  • Whole Cream Milk – 2 liter
  • Almonds (Thinly Slivered) – 10
  • Pistachios (Thinly Slivered) – 10
  • Sugar – 2 Cups
  • Cashews (Broken) – 8
  • Raisins – 15


  1. Wash and drain the poha. Leave it aside for 10 minutes.
  2. Separate poha grains with your finger.
  3. Boil the milk in a large vessel.
  4. When milk starts boiling, add poha and stir gently.
  5. Bring to boil again.
  6. Simmer till milk volume reduces to half. Stir occasionally.
  7. Now add sugar and cardamom powder. Stir to dissolve.
  8. Add fried raisins and cashews. Simmer for 2 more minutes. 
  9. Garnish with chopped almonds and pistachios.
  10. Serve hot.

Carrot Kheer

Ingredients:



  • Carrots – 4
  • Milk – 4 Cups (950 ml)
  • Sugar – ¾ Cup (200 gram)
  • Cardamom (Powdered) – 2
  • Almonds (grated) – 3 tbsp
  • Cashew nuts – 10
  • Almonds (Chopped) – 4 tsp
  • Raisins - 10


Method:



  1. Boil the carrots in water till they become soft.
  2. Grind them to paste along with cashews and keep it aside.
  3. Boil the milk. Reduce the flame and keep on stirring till it becomes thick and 2/4 of the quantity.
  4. Add sugar and grinded cardamom to milk and stir constantly till it becomes more thick and ¼ of the quantity.
  5.  Now add the carrot paste to milk and increase the flame. Mix well.
  6. When it starts boiling, remove from heat.
  7. Garnish with chopped almonds, raisins.
  8. Serve cold.

RICE KHEER




                                                                

Rice kheer is a famous South Indian recipe. Rice Kheer is usually prepared on the "PONGAL FESTIVALS" which comes on January month and offered to the lord. Rice Kheer (Akkaravadisal) usually offered as a prasadham in the temples which has an unique taste. It has lots of milk and jaggery - which translates to lots of calcium, protein and iron. Children like this sweet very much.

Ingredients needed:
[For 4 serves]

Basmati rice - 1 cup
Split yellow moong dal - 1/4 cup
Milk – 4 cups
Jaggery - 1 cup
Ghee -1/2 cup
Cardamom -5 (powdered)
Cashew nuts - 15
Raisins - 50 grams

Preparation:
  •  Wash and soak rice for half an hour. Drain and keep it aside.
  •  Fry moong dal till golden brown.
  • Melt jaggery in very less water (Make it as a syrup) and filter it impurities.
Method:
  • Boil milk, add rice, dal to it and cook till it becomes mushy.
  • Then boil jaggery for a few minutes and add it to the cooked rice.
  •  Fry cashew nuts, raisins in ghee separately and add everything along with the ghee to the Rice Kheer.
  • Add cardamom powder and mix well. Serve piping hot.
Note: 
  • You can do this in pressure cooker also but for best results follow this method. 
  •  Rice Kheer should be in semi-solid state. If the end preparation is too tight (i.e. solid), then add milk to make it little loose.
